Almond Butter Protein Bites

Best Simple Snack
Sunday is always a nice day to prepare for the rest of the week. I usually try to get as much done as I can, but this Sunday I wasn’t feeling well. I decided to use my time today to relax. I can’t remember the last time I’ve taken a nap, but today I was exhausted.
I ended up sleeping for an hour! I guess I needed it and after I felt so much better. When I woke up, we had dinner and then the kids asked if we can make dessert. We started looking through my recipes, but most things we talked about making required baking.
Easy treat to whip up in a pinch
Normally, this wouldn’t be a big deal, but two weeks ago our oven stopped working! The bake element at the bottom of the oven broke out in flames while we were baking. The fire quickly went out, but now the oven won’t heat.
Has this ever happened to you? Well, now I have been looking for a new bake element and was surprised that a new one will be $40! I know that might not be much to you, but as a single mom on a very tight budget, this is something that will have to wait. I’m looking around and hoping to find one cheaper, but for now it looks like we’ll be cooking on the stove, microwave, and in the crock pot.
No-bake healthy snack
As we looked through our recipes trying to figure out what we can make that doesn’t require the oven, we decided to make an old favorite: Almond Butter Protein Bites. Peanut butter and chocolate. Just what we were craving. The best thing is that they are actually pretty healthy.
Almond Butter Protein Bites
1 c. oatmeal
1/2 c. chia seeds
1/2 c. almond butter (or use any type of peanut or nut butter)
1/4 c. honey
1/4 c. ground flax seeds
1/4 c. mini dark chocolate chips
optional: chopped nuts, toasted coconut, etc.
Mix all ingredients into a bowl. Shape into balls and place on parchment paper or a silicone baking sheet. Chill.
I usually store them in the fridge for a few days (until they are gone), but they really don’t last long. You can add anything to them and change the recipe to your liking.

I didn’t have almond butter so I made these with peanut butter and included the optional coconut. They are delicious. Do you have a protein or calorie count for these?

When you say oatmeal, do you mean rolled (old fashioned or quick) oats or cooked oatmeal?

These are delicious! I didn’t have ground flax seeds so I left those out, but I did add coconut and some finely chopped pecans. I am really happy with the way that these turned out! They cure my sweet tooth and don’t make me feel bad about putting good ingredients in my mouth. Thanks so much for sharing!

Just add all the calories up that you used and divide by the number of balls you make.

This recipe is amazing! I was skeptical at first because it seemed so simple and I wasn’t sure if the consistency would turn out weird or not. But, they are so easy and delicious!! I actually can’t really believe how good they are for how little work. Hello, is the Chia seed amount correct? 1/2 cup. Usually recipes similar to this call for Tablespoons. After I chilled them, they still didn’t form well and the chia seeds are overwhelming.
